Soup's on!

Hello friendlies...I am in need of some help.  I'm hosting a lunch in a few weeks (Temple Sealing!!!) for about 40 or so people.  It'll be fall so I was thinking of doing a soup bar...you know, chili, creamy, cheesy, yummy (...cheesy is a must.  We love cheese at our house).  I have a couple recipes but I am looking for one more.  Right now I'm making my seven bean spicy chili & bacon corn chowder.  It has to be quick...relatively cheap (no lobster bisque) and able to please the masses.   Oh and it has to be able to be cooked in a crock pot.  

Do you have a favorite soup that just screams fall?  Would you share the recipe with me?

Yay!!! So excited for the momentous occasion for your family!
My twins just got baptized last weekend, and I was anticipating feeding about 40 people, and since it's fall, we had soups, too. We had corn chowder and taco soup. Do you already have a taco soup recipe? I add different things to mine every single time, but it's basically hamburger, onion, tomato juice, corn, taco seasoning, diced tomatoes, green chilis, and topped with cheese and chips.

My friend gave this recipe to me, and I made it just a couple weeks ago. So easy and good!

Easy Cassoulet Soup
2 med. carrots, cut into 1/2" slices
1 lg. onion, chopped
1 med. red or green sweet pepper, cut into 1/2" pieces
3 cloves garlic, minced
2 15-oz. cans cannellini beans or Great Northern beans, rinsed and drained
1 14.5-oz. can Italian-style stewed tomatoes (I used diced w/ Italian seasoning)
8 oz. boneless skinless chicken thighs, cut into 1" pieces (I used chicken breasts)
8 oz. smoked turkey sausage, halved lengthwise and cut into 1/2" pieces
2 c. chicken broth
1 T. snipped fresh parsley
1 t. dried thyme, crushed
1 bay leaf
1/8-1/4 t. cayenne pepper

In a 3.5-5 quart slow cooker place carrots, onion, sweet pepper, and garlic. Top with beans, tomatoes, chicken, and sausage. Add chicken broth, parsley, bay leaf, thyme and cayenne pepper. Cover and cook on low heat 7-8 hours or on high for 3.5-4 hours. Remove bay leaf before serving.

is the web page for my (very neglected) recipe blog. I have three really good soup recipes on there (Pasta Fagioli, Taco Soup, and Tomato Tortellini. One is specifically for the Crock Pot and the other two I am sure you can make in the Crock Pot really easily.

I have been trying to loose weight, so I haven't been making new things and posting on my recipe blog like I used to. But just a quick note, the taco soup recipe calls for a 15 oz. can of tomatoes and chilies, but Scott and I have weak stomachs, so we just use a can of diced tomatoes to turn down the heat a bit.

Lasagna Soup

1 lb ground beef
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 teaspoon thyme
1 Tablespoon firmly packed brown sugar
1 (32 ounce) box chicken broth or 4 cups
2 (14.5 ounce) can petite diced tomatoes
2 (8 ounce) can tomato sauce
2 teaspoon Italian seasoning
1/2 teaspoon salt
2 cups pasta, uncooked (or broken lasagna noodles)
1/2 cup of grated parmesan cheese
2 cup shredded mozzarella cheese


Combine ground beef, onion, bell pepper and garlic. Cook over medium heat for 8 to 10 minutes, stirring occasionally until beef is browned and crumbles. Drain well.

Stir in thyme, brown sugar, broth, diced tomatoes, tomato sauce, Italian seasoning, and salt. Bring to a boil, then reduce heat and simmer 20 minutes. In the meantime, cook pasta according to package directions in a separate pan. Drain.

Add cooked pasta to soup and stir in Parmesan cheese. Add mozarella.

I do it all in the crockpot. Just dumo it all in and let it heat up for a few hrs.I sometimes even add the raw meat crumbles and let it boil with the soup..or you can cook ahead. Tastes so good. Makes 8-10 servings

Beef Barley Soup

Approximately 3 cups of beef broth
1 small can tomato paste
1 can diced tomatoes
stew meat (or hamburger, what ever you want to use)
carrots
peas
green beans
sliced celery
cubed potatoes
salt
pepper
garlic
rosemary
basil

**My cheater tip...I buy frozen green beans, the frozen bag of peas & carrots, and the bag of frozen cubed potatoes. That way I don't have to dice the carrots & potatoes! They are all even sized cubes and it works SO nice!

This soup is really one that you cook to taste. Put in as much of any ingredient that you want.

Brown your stew meat in a pan with just a touch of oil, salt, pepper, and garlic. Combine all of your ingredients in a pot and cook until the everything (meat, veggies and barley) is tender. You may want to add more seasonings. I didn't use a ton of rosemary or basil, but a touch adds a great flavor!

I used about 1/3 cup of barley, and it was perfect. Barley, like rice, will swell in the liquid, so remember that when putting it in your soup.

It works great in a crock pot.

We like to slice cheese and put it on top of this soup...it gets all melty and delicious!

I think it's hilarious that your banner is all decked out for Halloween. So cute.

I have a really good chicken tortilla soup. It has tons of fresh ingredients which make it super flavorful and would do well made ahead and in a crock pot.

By the way, do you need crock pots? If so, we could bring ours to the walk.

i don't have a soup recipe. (well i do, but it looks like the suggestions above are fabulous!....mine was simply, stew.) i'm just so excited for the big day, i had to say Congrats! i can't wait to see pics and hear all about it!
